Abstract

|
|
A bacterial strain producing extracellular inulin fructotransferase was isolated from soil. The di-D-fructose anhydride produced from inulin by the strain was not hydrolyzed either by endo or exo inulase and identified as DFA III (1,2´ : 2, 3´) by thin layer and high performance liquid chromatography. The crude enzyme was prepared by 80% ammonium sulfate precipitation and purified with DEAE-cellulose column chromatography.
